CITRUS, FETA & RED ONION SALAD

This salad combines some really good things – zingy citrus, creamy feta and peppery rocket. It has only a handful of ingredients, but they all play their part in making a well-loved and versatile dish. I’ve suggested a combination of citrus here – blood oranges, tangelo and orange, as they not only look beautiful but bring different levels of acidity and flavour to such a simple salad. That being said, even one type of citrus, like orange, will still be wonderful.
SERVES 4
INGREDIENTS
2 blood oranges
1 tangelo
1 orange
1 small red onion, halved and finely sliced
150 g Greek feta, crumbled handful of rocket leaves
large handful of mint leaves, roughly torn
DRESSING
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon honey
pinch of Aleppo pepper
sea salt and black pepper
RECIPE
Using a sharp knife, slice the bottoms and tops off all the citrus. Peel the citrus, starting from the top and following the curve of the flesh to the bottom. Cut the peeled citrus into 5 mm thick slices. Arrange on a plate and top with the onion, feta, rocket and mint.
Combine all the dressing ingredients in a jar and shake to emulsify. Adjust the seasoning to taste, then pour the dressing over the salad and serve.
