The delectable end of our meal is Luke’s purple doughnuts. These use ube powder, a purple starch made in the Philippines from the purple yam. Aside from its stunning colour, this yam is known to improve blood-sugar regulation and has also been shown to have significant antibacterial and antifungal properties.
